Soy Miso Salmon

- 1 lb salmon , deboned and portioned into 2-3 filets.
- 1 tablespoon red miso
- 1 tablespoon soy sauce
- 1 teaspoons mirin
- 1 teaspoon sake
- Neutral oil
- Salt and pepper
- One bunch of green onion or scallion, cut thin on a hard bias

Ahead of cooking, lightly season salmon fillets with salt and allow to rest while you make the glaze.
To make the glaze, combine the soy, mirin, soy sauce and sake and mix well.
To begin, heat pan over medium high heat and coat with neutral oil
Once the oil begins to shimmer, carefully place salmon flesh side down and sear, without moving, for approximately 5-7 minutes. Once evenly brown, carefully flip the salmon over and cook the other side for an additional 1-2 minutes.
Next, pour the miso glaze over the salmon, add the lid and turn the heat down to low to gently simmer and impart the flavors into the salmon. Another 2 minutes.
Finish with the fresh cut green onion and enjoy with rice, quinoa or noodles.
