Cast Iron Coffee Cake

Ingredients: 


Topping: 

  • 1/4 cup sugar 
  • 3/4 teaspoon ground cinnamon 

Batter: 

  • 1 cup all-purpose flour 
  • 1/3 cup sugar  
  • 2 teaspoons baking powder 
  • 3/4 teaspoon ground cinnamon 
  • 1/2 teaspoon salt 
  • 1 large egg, well beaten 
  • 1/3 cup evaporated milk  
  • 1/3 cup water 
  • 3 tablespoons melted butter 

Method: 


To keep it simple, pre-mix ingredients before departing on your outdoor adventure! For the topping, combine sugar and cinnamon. Grease the Cast Iron Oval or your heavy skillet of choice. Cover the bottom of the pot with a layer of heavy parchment paper, cut to fit. Grease the top of the parchment paper. In a mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt. In a separate bowl, combine the wet ingredients: the egg, milk, water, and butter.  

Combine the wet and dry ingredients, mixing quickly. Pour the mixture into the Cast Iron Oval and top with the cinnamon and sugar mixture. Add the lid and cook on the stove for 30 – 35 minutes on low heat. The cake will be firm to the touch when finished. Gently lift from the skillet and remove the paper while the cake is hot. Pair it with a cup of coffee and serve warm.
